Role Overview:

We are seeking an experienced and motivated Sous Chef to support our Executive Chef in delivering an exceptional culinary experience across the hotel. This is a key operational role, responsible for leading kitchen service in the Executive Chef’s absence, mentoring junior chefs, and ensuring consistency, quality, and efficiency in every dish. The successful candidate will bring strong cooking skills, a passion for fresh seasonal food, and the ability to thrive in a busy kitchen environment.

Key Responsibilities:

  • Assist the Executive Chef in leading and motivating the kitchen brigade to deliver high-quality, freshly prepared dishes.
  • Supervise and run kitchen sections during service, maintaining standards and efficiency.
  • Contribute to menu development, bringing creativity and a focus on seasonal produce.
  • Support the smooth delivery of food service across the restaurant, weddings, banqueting, private events, and meetings.
  • Uphold the hotel’s food hygiene rating and ensure compliance with food safety and health & safety legislation.
  • Assist in managing kitchen stock, controlling waste, and monitoring food costs to meet GP targets.
  • Train and mentor junior chefs, fostering a positive, respectful, and team-focused environment.
  • Work collaboratively with the events and front-of-house teams to ensure timely, high-quality service.
  • Deputise for the Executive Chef as required, maintaining operational standards and guest satisfaction.

Person Specification:

  • Proven experience as a Sous Chef or Junior Sous in a hotel, banqueting venue, or high-volume restaurant.
  • Strong background in fresh food cooking and working with seasonal menus.
  • Experience supporting large-scale functions and events.
  • Knowledge of food hygiene standards with a track record of maintaining high ratings.
  • Organised, dependable, and able to work calmly under pressure.
  • Team player with strong leadership and communication skills.
  • Flexible and hands-on approach to work, with a passion for delivering excellence.
